Fresh produce plucked from a roadside farmstand often forms the main ingredients of a gourmet meal at an Arizona resort soon to become the nation's first all-organic property.

The Boulders Resort & Golden Door Spa, a 1300-acre vacation mecca in the foothills near the tony community of Scottsdale, invites guests to visit the adjacent all-natural farmers market on Fridays and let hotel chefs incorporate them into that night's dinner.

The market, located at el Pedregal festival marketplace, is already a local attraction, thanks to strolling musicians and chef demonstrations.

Those demonstrations can come in handy at the resort, where two-hour spa cooking classes are offered the first Saturday of every month (excluding the summer). Open to both residents and guests, the classes emphasize healthy cooking using organic products.

Coming in October is an organic garden encompassing 5,280 square feet and featuring eight elevated planter-box areas separated by a flowing water feature. Lettuce, tomatoes, carrots, celery, herbs, and edible flowers will thrive in the garden, along with the orange, grapefruit, lemon, and lime trees that will line its perimeter.

In addition to tours led by the Boulders' chief gardener, the resort will offer cooking demonstrations and interactive classes in the Golden Door Spa's chef demonstration kitchen.

Boulders guests can sample the Enlightened Garden Lunch program or try an al fresco dining experience set against the backdrop of a Sonoran Desert sunset. Resort chefs will be available to explain about cooking with organic goods.

Chef de Cuisine Wendy Little, hired in April, has nearly 15 years of organic cooking experience. Shortly after her arrival, she implemented the all-organic menu at Latilla, the resort's signature restaurant.

The Boulders also features an organic wine list at the Golden Door Spa, where a spa sommelier helps guests make selections that suit both personal tastes and food pairings. For further information, see www.TheBoulders.com or call 800-553-1717.
